Jordan's national dish: tender lamb in a tangy yogurt sauce over rice with almonds.

Ingredients
- 120 g Lamb leg (lean)
- 60 g Basmati rice
- 150 g Plain yogurt (curd)
- 1 clove Garlic
- ½ tbsp Olive oil
- 8 g Almonds
- 6 g Pine nuts
- ¼ tsp Salt
Method
- Brown the lamb in the oil for 5 minutes, add the garlic and 300ml water; cover and simmer for 30 minutes until tender.
- Stir the yogurt into the lamb and its liquid over low heat, stirring constantly so it doesn't split; simmer gently for 5 minutes.
- Meanwhile, cook the rice according to the packet.
- Spoon the rice onto a platter, pour over the lamb and yogurt sauce, and scatter with toasted almonds and pine nuts.
