Efo riro (Nigerian spinach stew)
Rich spinach and pepper stew with tender beef, spooned over rice.

Ingredients
- 130 g Stewing beef
- 150 g Spinach
- 100 g Chopped tomatoes (tinned)
- ½ onion Onion
- ¼ pepper Bell peppers
- 1 chilli Red chillies
- 2 cloves Garlic
- 4 g Ginger
- ½ tbsp Sunflower oil
- 55 g Basmati rice
- 100 ml Vegetable stock
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Blend the tomatoes, half the onion, pepper and chilli into a smooth base; simmer the rice in salted water for 15 minutes.
- Brown the beef in the oil for 5 minutes, add the remaining onion, garlic and ginger and cook for 3 minutes.
- Pour in the blended base and stock, cover and simmer for 25 minutes until the beef is tender.
- Stir in the spinach and cook for 4 minutes until just wilted, season and serve with the rice.
