Akara (Nigerian bean fritters)
Crisp fried bean fritters spiked with onion and chilli.

Per serving, for one person.
Ingredients
- 100 g Black beans (tinned, drained)
- ½ onion Onion
- ½ chilli Red chillies
- ½ tbsp Sunflower oil
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Mash the beans with the onion, chilli, salt and pepper into a thick, slightly chunky batter.
- Heat the oil in a pan and drop in spoonfuls of the batter.
- Fry for 3 minutes per side until deep golden and crisp, then drain on paper before serving.
