Ingredients
- 150 g Plantain
- ½ tbsp Sunflower oil
- 4 g Ginger
- ¼ tsp Chilli powder
- ½ tsp Ground cumin
- 15 g Peanuts
- ¼ tsp Salt
Method
- Toss the diced plantain with the grated ginger, chilli powder, cumin and salt.
- Heat the oil in a pan and fry the plantain for 3-4 minutes per side until caramelised and golden.
- Drain briefly on paper and scatter with the peanuts before serving.
