Waakye (Ghanaian rice and beans)
Rice and beans cooked together in a lightly spiced tomato broth.

Ingredients
- 55 g Jasmine rice
- 150 g Black beans (tinned, drained)
- ½ onion Onion
- 80 g Chopped tomatoes (tinned)
- ½ tbsp Sunflower oil
- 3 g Ginger
- 1 clove Garlic
- ¾ tsp Chilli flakes
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Fry the onion, garlic and ginger in the oil for 5 minutes until soft.
- Stir in the tomatoes and chilli flakes and cook for 5 minutes.
- Add the rice, beans and 200ml water, season with salt and pepper.
- Cover and simmer on low for 18 minutes until the rice is tender, then rest for 5 minutes before serving.
