Red red (Ghanaian bean stew with fried plantain)
Black-eyed pea stew in palm-red tomato sauce with sweet fried plantain.

Per serving, for one person.
Ingredients
- 180 g Black beans (tinned, drained)
- 120 g Plantain
- 100 g Chopped tomatoes (tinned)
- ½ onion Onion
- ¾ tbsp Sunflower oil
- 3 g Ginger
- 1 clove Garlic
- ½ chilli Red chillies
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Heat half the oil and fry the plantain slices for 3 minutes per side until golden; set aside.
- In the same pan, fry the onion, garlic and ginger in the remaining oil for 5 minutes.
- Stir in the tomatoes and chilli, cook for 8 minutes until thickened.
- Add the beans and a splash of water, simmer for 10 minutes, season and serve with the fried plantain.
