Asaro (Nigerian yam and bean porridge)
Soft mashed yam porridge simmered in a spiced tomato sauce with beans.

Ingredients
- 250 g Yam (African)
- 80 g Black beans (tinned, drained)
- 100 g Chopped tomatoes (tinned)
- ½ onion Onion
- ¾ chilli Red chillies
- ½ tbsp Sunflower oil
- 3 g Ginger
- 1 clove Garlic
- 60 g Spinach
- 100 ml Vegetable stock
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Boil the yam chunks in salted water for 15 minutes until soft enough to mash lightly.
- Meanwhile fry the onion, garlic and ginger in the oil for 5 minutes, add the tomatoes and chilli and cook for 8 minutes.
- Add the beans and stock, simmer for 5 minutes, then stir in the drained yam, mashing some of it into the sauce.
- Fold in the spinach, cook for 3 minutes and season to taste.
