Ndambe (Senegalese black-eyed pea breakfast stew)

Per serving, for one person.
Ingredients
- 200 g Black beans (tinned, drained)
- ½ onion Onion
- 60 g Chopped tomatoes (tinned)
- 1 clove Garlic
- ½ tbsp Sunflower oil
- ¾ tsp Chilli flakes
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Fry the onion and garlic in the oil for 5 minutes until soft.
- Stir in the tomatoes and chilli flakes, cook for 5 minutes until thickened.
- Add the beans with a splash of water, simmer for 10 minutes, mashing a few beans to thicken.
- Season with salt and pepper and serve warm.
