Yassa chicken (Senegalese lemon-onion chicken)
Chicken braised with heaps of onion, lemon and mustard until sweet and tangy.

Ingredients
- 150 g Chicken thighs (boneless)
- 1¼ onions Onion
- 1 lemon Lemons
- 2 cloves Garlic
- 1 tsp Dijon mustard
- ½ tbsp Sunflower oil
- 55 g Jasmine rice
- 80 ml Vegetable stock
- ½ tsp Black pepper
- ¼ tsp Salt
Method
- Marinate the chicken with lemon juice, mustard, garlic and pepper for at least 20 minutes.
- Simmer the rice in salted water for 15 minutes until tender.
- Fry the chicken in half the oil for 4 minutes per side until golden, then set aside.
- Add the remaining oil and the onion, cook for 12 minutes until deeply softened, then return the chicken with the stock.
- Cover and simmer for 15 minutes until the chicken is tender, then serve with the rice.
