Egusi soup with chicken
Ground melon seed soup thickened and simmered with chicken and spinach.

Per serving, for one person.
Ingredients
- 130 g Chicken thighs (boneless)
- 30 g Egusi (ground melon seeds)
- 100 g Spinach
- 80 g Chopped tomatoes (tinned)
- ½ onion Onion
- ¾ chilli Red chillies
- 1 clove Garlic
- 4 g Ginger
- ½ tbsp Sunflower oil
- 100 ml Vegetable stock
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Fry the onion, garlic and ginger in the oil for 4 minutes, then stir in the tomatoes and chilli and cook for 6 minutes.
- Add the chicken and stock, cover and simmer for 20 minutes until the chicken is cooked through.
- Stir in the egusi paste in spoonfuls, simmer for 8 minutes, stirring often so it doesn't stick.
- Fold in the spinach, cook for 3 minutes and season to taste.
