Moin moin (Nigerian steamed bean pudding)
Steamed savoury bean pudding studded with egg, pepper and onion.

Ingredients
- 200 g Black beans (tinned, drained)
- 1 egg Eggs
- ½ onion Onion
- ½ pepper Bell peppers
- ¾ chilli Red chillies
- ¾ tbsp Sunflower oil
- 60 ml Vegetable stock
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Blend the beans, onion, bell pepper and chilli with the stock and oil until smooth.
- Season the batter with salt and pepper, then fold in the sliced boiled egg.
- Spoon the batter into two small heatproof bowls or ramekins and cover tightly with foil.
- Steam over simmering water for 35 minutes until firm and set. Rest for 5 minutes before turning out.
