Hungarian goulash
Slow-simmered paprika beef stew with potato and sweet pepper.

Per serving, for one person.
Ingredients
- 150 g Stewing beef
- 1 onion Onion
- ½ pepper Bell peppers
- 80 g Chopped tomatoes (tinned)
- 1¾ tsp Paprika
- 1 clove Garlic
- ½ tsp Ground cumin
- ½ tbsp Sunflower oil
- 150 g Potatoes
- 150 ml Vegetable stock
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Brown the beef in the oil for 6 minutes, then set aside.
- Fry the onion in the same pot for 8 minutes until soft, add the garlic, paprika and cumin and cook for 1 minute.
- Return the beef with the pepper, tomatoes and stock, cover and simmer for 35 minutes.
- Add the potato and simmer for a further 15 minutes until tender, season and serve.
