Salmon poke bowl
Cubed marinated salmon over sushi rice with edamame, cucumber and avocado.

Ingredients
- 130 g Salmon fillets
- 80 g Sushi rice
- 40 g Edamame
- ¼ cucumber Cucumber
- ¼ avocado Avocados
- ½ tbsp Soy sauce (reduced salt)
- ¾ tsp Toasted sesame oil
- ¾ tsp Sesame seeds
Method
- Cook the sushi rice according to packet instructions, then cool slightly.
- Cube the salmon and toss with the soy sauce and sesame oil to marinate for 10 minutes.
- Boil the edamame for 4-5 minutes, then drain.
- Spoon the rice into a bowl, top with the salmon, edamame, cucumber and avocado, and scatter with sesame seeds.
