Marinated tofu cubes over sushi rice with edamame, avocado and crunchy carrot.

Ingredients
- 150 g Firm tofu
- 80 g Sushi rice
- 40 g Edamame
- ¼ cucumber Cucumber
- ¼ avocado Avocados
- ½ carrot Carrots
- ¾ tbsp Tamari (gluten-free)
- ¾ tsp Toasted sesame oil
Method
- Cook the sushi rice according to packet instructions, then cool slightly.
- Cube the tofu and toss with the tamari and sesame oil to marinate for 10 minutes.
- Boil the edamame for 4-5 minutes, then drain.
- Spoon the rice into a bowl, top with the tofu, edamame, cucumber, carrot and avocado, and serve.
