Kaya toast with soft-boiled eggs
Crisp toast with sweet coconut kaya jam and butter, served with soft-boiled eggs.

Ingredients
- 2 slices White bread
- 2 tbsp Kaya (coconut egg jam)
- ½ tbsp Butter
- 2 eggs Eggs
- ¼ tbsp Soy sauce (reduced salt)
- ½ tsp Black pepper
Method
- Soft-boil the eggs in simmering water for 5 minutes, then crack into a small bowl.
- Toast the bread until golden and crisp.
- Spread one slice with butter and the other with kaya, then sandwich together and cut into fingers.
- Season the soft eggs with a dash of soy sauce and pepper and serve alongside the toast for dipping.
