Nasi goreng ayam (Indonesian chicken fried rice)
Smoky sweet-savoury fried rice with chicken, egg and a fried shallot crunch.

Ingredients
- 60 g Jasmine rice
- 120 g Chicken thighs (boneless)
- 1 egg Eggs
- ¾ tbsp Soy sauce (reduced salt)
- 1¼ tsp Sugar
- 2 cloves Garlic
- ¾ shallot Shallots
- 1¼ chillis Red chillies
- ½ tbsp Sunflower oil
Method
- Cook the rice in a covered pan with water for 20 minutes, then spread out to cool.
- Blend garlic, shallot and chilli to a paste, fry in the oil for 2 minutes, add the chicken and cook 5 minutes.
- Push aside, crack in the egg and scramble.
- Add the rice, breaking up lumps, then season with soy sauce and sugar.
- Stir-fry for 4 minutes until evenly coated and slightly smoky, then serve hot.
