Popiah (fresh spring rolls)

Ingredients
- 1 tortilla Flour tortillas
- 1 carrot Carrots
- ¾ egg Eggs
- 45 g Prawns
- 2 cloves Garlic
- ½ tbsp Soy sauce (reduced salt)
- ¼ tbsp Sunflower oil
- 20 g Lettuce
Method
- Fry the garlic in the oil for 1 minute, add the shredded carrot and stir-fry 6 minutes until soft, season with soy sauce.
- Simmer the prawns for 3 minutes until pink, then chop roughly.
- Make a thin omelette with the egg and slice into strips.
- Lay a tortilla flat, top with lettuce, braised carrot, prawns and egg strips, and roll up tightly.
- Slice in half and serve.
