Sate ayam (chicken satay with peanut sauce)
Charred skewered chicken with a rich, spiced peanut dipping sauce and rice.

Ingredients
- 150 g Chicken thighs (boneless)
- 1½ tbsp Peanut butter
- ¾ tbsp Soy sauce (reduced salt)
- 1½ tsp Sugar
- 2 cloves Garlic
- 1 chilli Red chillies
- ¼ lime Limes
- 55 g Jasmine rice
- ¼ cucumber Cucumber
- ½ tbsp Sunflower oil
Method
- Cook the rice in a covered pan with water for 20 minutes.
- Marinate the chicken strips with half the soy sauce and garlic for 10 minutes, then thread onto skewers.
- Grill or pan-fry the skewers in the oil for 8 minutes, turning, until charred and cooked through.
- Whisk the peanut butter, remaining soy sauce, sugar, chilli and lime juice with 60ml warm water into a sauce.
- Serve the skewers with the peanut sauce, rice and sliced cucumber.
