Shakshuka
Eggs gently poached in a smoky spiced tomato and pepper sauce, finished with feta.

Ingredients
- 2 eggs Eggs
- 150 g Chopped tomatoes (tinned)
- ½ onion Onion
- ½ pepper Bell peppers
- 2 cloves Garlic
- ¾ tsp Ground cumin
- ¾ tsp Paprika
- ¾ tsp Chilli flakes
- ½ tbsp Olive oil
- 20 g Feta
- 4 g Coriander
- ¼ tsp Salt
Method
- Heat the oil and cook the onion and pepper over medium heat for 8 minutes until soft.
- Add the garlic, cumin, paprika and chilli flakes, and cook for 1 minute.
- Pour in the tomatoes, season, and simmer for 10 minutes until thickened.
- Make two wells in the sauce, crack in the eggs, cover and cook for 6-8 minutes until just set.
- Crumble over the feta and scatter with coriander.
