Andhra chicken curry
A fiery, red-chilli forward chicken curry from Andhra Pradesh, deeply spiced and tangy.

Per serving, for one person.
Ingredients
- 50 g Basmati rice
- 150 g Chicken thighs (boneless)
- ½ onion Onion
- ½ tomato Tomatoes
- ½ chilli Red chillies
- 1 clove Garlic
- 5 g Ginger
- 1 tsp Ground coriander
- 2 g Curry leaves
- ½ tbsp Sunflower oil
- ¼ tsp Turmeric
- ¼ tsp Salt
Method
- Cook the rice until tender; set aside.
- Heat the oil, cook the onion for 8 minutes until golden, then add garlic and ginger for a minute.
- Stir in turmeric, red chilli and coriander powder, then the tomato, and cook 6 minutes until thick.
- Add the chicken and a splash of water, cover and simmer 20 minutes until tender.
- Stir in curry leaves, season with salt and serve with the rice.
