Bihari mutton curry
Mutton simmered slowly in a deeply spiced onion-garlic-ginger gravy, rustic Bihari style.

Ingredients
- 180 g Mutton (goat, bone-in)
- ½ onion Onion
- 2 cloves Garlic
- 4 g Ginger
- ½ tbsp Mustard oil
- 1 tsp Garam masala
- 50 g Basmati rice
- ¼ tsp Turmeric
- ¾ tsp Chilli powder
- ¼ tsp Salt
Method
- Heat the mustard oil and fry the onion for 10-12 minutes until deep golden.
- Add the garlic-ginger paste and cook a minute, then add the mutton and brown well for 8 minutes.
- Stir in turmeric and chilli powder, add a cup and a half of water, cover and simmer 30-35 minutes until tender.
- Stir in the garam masala and season with salt.
- Rinse the rice and simmer in twice its volume of water for 15 minutes; serve the curry over the rice.
