Roasted wheat and roasted-gram-flour balls served with smoky mashed aubergine and potato.

Ingredients
- 45 g Wholewheat flour (atta)
- 45 g Sattu (roasted gram flour)
- 120 g Aubergine
- 80 g Potatoes
- ½ tbsp Mustard oil
- 2 cloves Garlic
- 1 chilli Green chillies
- ¼ lemon Lemons
- 5 g Coriander
- ¼ tsp Salt
Method
- Mix the sattu with crushed garlic, half the green chilli, half the mustard oil, lemon juice and salt into a firm, crumbly filling.
- Knead the atta with water into a firm dough, divide into balls, stuff with the sattu filling and seal.
- Bake the stuffed balls at 200°C for 25-30 minutes, turning once, until browned and cooked through.
- Char the aubergine over a flame or under a hot grill until the skin blisters and the flesh softens; peel and mash with the boiled potato.
- Season the chokha with the remaining mustard oil, garlic, green chilli, coriander and salt, and serve alongside the litti.
