Chicken kabsa
Saudi spiced rice simmered with chicken, dried lime and warming baharat.

Ingredients
- 140 g Chicken thighs (boneless)
- 65 g Basmati rice
- ½ onion Onion
- ½ carrot Carrots
- 1 dried lime Dried lime (loomi)
- 10 g Raisins
- 1½ tsp Baharat spice mix
- ½ tsp Cinnamon
- ½ tsp Cardamom
- ½ tbsp Olive oil
- ¼ tsp Salt
Method
- Warm the oil and brown the chicken thighs for 4 minutes per side, then set aside.
- Cook the onion and carrot in the same pot for 8 minutes until golden. Stir in baharat, cinnamon and cardamom.
- Add the rice, dried lime, raisins and 1.4x volume of water; nestle the chicken back in.
- Cover and simmer on low for 20 minutes until the rice is tender and the liquid is absorbed.
