A slow-simmered stew of lamb, potatoes, carrots and barley in a rich broth.

Ingredients
- 120 g Lamb leg (lean)
- 200 g Potatoes
- 1½ carrots Carrots
- ½ onion Onion
- 30 g Pearl barley
- 200 ml Vegetable stock
- 1 tsp Dried thyme
Method
- Brown the lamb in a dry pan over high heat for 5 minutes, then remove.
- Add the onion to the pan and cook for 5 minutes until soft.
- Return the lamb with the potato, carrot, barley, stock and thyme. Bring to a simmer.
- Cover and cook gently for 55-60 minutes, stirring occasionally, until the lamb and barley are tender.
