Colcannon cake with a fried egg
Crisp-fried mashed potato and cabbage cake topped with a fried egg.

Ingredients
- 180 g Potatoes
- 80 g Cabbage
- 15 g Spring onions
- 1¼ eggs Eggs
- ½ tbsp Olive oil
Method
- Boil the potato for 15 minutes until tender, then mash roughly.
- Steam or boil the cabbage for 4 minutes until just tender, drain well and stir through the mash with the spring onion.
- Shape into a cake and fry in half the oil for 4 minutes a side until crisp and golden.
- Fry the egg in the remaining oil and serve on top.
