Lomo saltado
Stir-fried steak with red onion and tomato in a soy-vinegar sauce, with roasted potato.

Ingredients
- 150 g Sirloin steak
- ½ red onion Red onion
- ¾ tomato Tomatoes
- 150 g Potatoes
- ½ tbsp Sunflower oil
- 1 tbsp Soy sauce (reduced salt)
- ¼ tbsp Vinegar
- 5 g Coriander
- ¼ tsp Salt
Method
- Toss the potato wedges in a little of the oil and roast at 200C for 25 minutes until golden.
- Heat the remaining oil in a hot pan or wok and sear the beef strips for 2 minutes; set aside.
- Stir-fry the onion for 3 minutes, add the tomato and cook 2 minutes, then return the beef with soy sauce and vinegar.
- Toss everything together over high heat for 1 minute and serve with the roast potato, scattered with coriander.
