Ingredients
- 60 g Semolina (rava/sooji)
- 20 g Rice flour
- ¼ onion Onion
- 1 tsp Cumin seeds
- ½ chilli Green chillies
- 2 g Curry leaves
- ½ tbsp Sunflower oil
- 40 ml Buttermilk
- ¼ tsp Salt
Method
- Whisk semolina, rice flour, buttermilk and enough water into a thin, pourable batter; rest 15 minutes.
- Stir in the onion, cumin, green chilli and curry leaves.
- Heat a flat pan well, pour the thin batter from height in a circular motion to form a lacy crepe.
- Drizzle oil around the edges and cook until golden and crisp, then flip briefly.
- Fold and serve hot with chutney.
