Rava idli
Fluffy steamed semolina cakes tempered with mustard seeds, cashew and curry leaves.

Ingredients
- 70 g Semolina (rava/sooji)
- 40 g Plain yogurt (curd)
- ¼ tsp Mustard seeds
- 2 g Curry leaves
- 8 g Cashews
- ½ tbsp Sunflower oil
- ¼ tsp Baking powder
- ¼ carrot Carrots
- ¼ tsp Salt
Method
- Dry-roast the semolina for 3 minutes, then cool and mix with curd, baking powder, salt and enough water to make a thick batter; rest 10 minutes.
- Heat the oil, splutter mustard seeds and curry leaves, then toast the cashews; fold into the batter with the grated carrot.
- Grease an idli mould, spoon in the batter and steam for 12-15 minutes until a knife comes out clean.
- Rest 2 minutes before unmoulding.
- Serve hot with chutney or sambar.
