Bengali chicken jhol
A light, home-style Bengali chicken curry with potato, gently spiced with garam masala.

Ingredients
- 170 g Chicken thighs (boneless)
- 100 g Potatoes
- ½ onion Onion
- ½ tomato Tomatoes
- ½ tbsp Mustard oil
- 1 tsp Garam masala
- 55 g Basmati rice
- ¼ tsp Turmeric
- ¾ tsp Chilli powder
- ¼ tsp Salt
Method
- Heat the mustard oil and cook the onion for 8 minutes until golden.
- Add the tomato, turmeric and chilli powder, and cook until pulpy.
- Add the chicken and potato, cook 5 minutes stirring, then add a cup and a half of water.
- Cover and simmer 20 minutes until the chicken and potato are cooked through; stir in the garam masala.
- Rinse the rice and simmer in twice its volume of water for 15 minutes; serve the jhol over the rice.
