Ingredients
- 50 g Plain flour
- ½ tbsp Sunflower oil
- 150 g Potatoes
- ¼ tomato Tomatoes
- ¼ tsp Turmeric
- ¾ tsp Chilli powder
- 1 tsp Ground coriander
- 5 g Coriander
- ¼ tsp Salt
Method
- Knead the flour with a spoon of oil, salt and water into a stiff dough; rest 10 minutes and roll into small discs.
- Shallow-fry each disc briefly in hot oil, pressing gently, until it puffs up; drain.
- For the aloo dum, heat the remaining oil and cook tomato with turmeric, chilli powder and coriander powder until pulpy.
- Add the boiled potatoes and a splash of water, simmer 6-8 minutes, then finish with coriander.
