Shorshe mach (mustard fish curry)
Oily fish simmered in a sharp, pungent ground mustard seed and green chilli gravy.

Ingredients
- 170 g Mackerel fillets
- 1¾ tsp Mustard seeds
- ½ tbsp Mustard oil
- 1¼ chillis Green chillies
- 50 g Basmati rice
- ¼ tsp Turmeric
- ¼ tsp Salt
Method
- Soak the mustard seeds in warm water for 20 minutes, then blend to a smooth paste with the green chilli.
- Rub the fish with turmeric and salt.
- Heat the mustard oil, add the mustard paste and cook gently for 2-3 minutes, taking care it does not catch.
- Add a cup of water, bring to a simmer, then slide in the fish and cook gently for 8-10 minutes.
- Rinse the rice and simmer in twice its volume of water for 15 minutes; serve the curry over the rice.
