Bengali mutton curry (kosha mangsho)
Mutton slow-braised in a deeply browned onion-yogurt gravy, a rich Sunday Bengali classic.

Ingredients
- 180 g Mutton (goat, bone-in)
- 40 g Plain yogurt (curd)
- ½ onion Onion
- ½ tbsp Mustard oil
- 1 tsp Garam masala
- 50 g Basmati rice
- ¼ tsp Turmeric
- ¾ tsp Chilli powder
- ¼ tsp Salt
Method
- Marinate the mutton in curd, turmeric, chilli powder and salt for at least 30 minutes.
- Heat the mustard oil and fry the onion slowly for 12-15 minutes until deep brown.
- Add the marinated mutton and cook over high heat for 8-10 minutes, stirring, until browned all over.
- Add a cup of water, cover and simmer 30-35 minutes until the mutton is tender; stir in the garam masala.
- Rinse the rice and simmer in twice its volume of water for 15 minutes; serve the curry over the rice.
