Dakgalbi (Korean spicy stir-fried chicken)

Ingredients
- 160 g Chicken thighs (boneless)
- 100 g Cabbage
- 70 g Sweet potatoes
- ½ onion Onion
- 65 g Jasmine rice
- 1 tbsp Gochujang
- 1 tsp Gochugaru (Korean chilli flakes)
- 2 cloves Garlic
- 1 tsp Sugar
- 1 tsp Toasted sesame oil
- ½ tbsp Sunflower oil
Method
- Cook the rice according to packet instructions.
- Mix the chicken with gochujang, gochugaru, garlic and sugar, and leave to marinate for 10 minutes.
- Heat the oil in a large pan and fry the sweet potato for 4 minutes until starting to soften.
- Add the marinated chicken and cook for 6-7 minutes, then add the cabbage and onion and stir-fry for 4-5 minutes until everything is tender.
- Drizzle with sesame oil and serve with the rice.
