Tteokbokki (spicy rice cakes)
Chewy rice cakes simmered in a sweet, spicy gochujang sauce, a Korean street-food favourite.

Ingredients
- 110 g Korean/Japanese rice cakes (tteok/mochi)
- ¾ tbsp Gochujang
- 1 tsp Gochugaru (Korean chilli flakes)
- 1½ tsp Sugar
- 2 cloves Garlic
- 15 g Spring onions
- 180 ml Vegetable stock
- ¼ tsp Sesame seeds
Method
- Bring the stock to a simmer with the gochujang, gochugaru, sugar and garlic, stirring until smooth.
- Add the rice cakes and simmer for 10-12 minutes, stirring often, until soft and the sauce has thickened and coats them.
- Stir through most of the spring onion in the last minute.
- Scatter with sesame seeds and remaining spring onion to serve.
