Moroccan fish tagine
White fish gently simmered with tomato, peppers, olives and lemon.

Ingredients
- 180 g White fish fillets
- 1¼ tomatos Tomatoes
- 20 g Olives
- ½ pepper Bell peppers
- ½ onion Onion
- 2 cloves Garlic
- ½ tbsp Olive oil
- ¾ tsp Ground cumin
- ½ tsp Paprika
- 5 g Coriander
- ¼ lemon Lemons
- ¼ tsp Salt
Method
- Warm the oil and cook the onion and pepper for 8 minutes until softened.
- Add the garlic and spices and cook for a minute, then add the tomato and olives and simmer for 8 minutes.
- Lay the fish on top, cover and cook gently for 10 minutes until it flakes easily.
- Finish with coriander and a squeeze of lemon.
