Naga pork with bamboo shoot
Tender pork simmered with tangy bamboo shoot and plenty of ginger and green chilli, Naga style.

Ingredients
- 160 g Pork tenderloin
- 80 g Bamboo shoots (tinned)
- 5 g Ginger
- 1 chilli Green chillies
- ½ tbsp Sunflower oil
- 55 g Basmati rice
- ¼ tsp Turmeric
- ¼ tsp Salt
Method
- Heat the oil and fry the ginger and green chilli for a minute until fragrant.
- Add the pork and turmeric, and cook 6-8 minutes, stirring, until lightly browned.
- Add the bamboo shoot and a cup of water, cover and simmer 20-25 minutes until the pork is tender.
- Season with salt.
- Rinse the rice and simmer in twice its volume of water for 15 minutes; serve alongside.
