Ingredients
- 50 g Rice flour
- 30 g Fresh coconut
- 25 g Jaggery
- ½ tsp Cardamom
- ¼ tbsp Sunflower oil
Method
- Cook grated coconut with jaggery and cardamom over low heat for 5 minutes until sticky; cool.
- Whisk rice flour with hot water and a pinch of salt into a thin, pourable batter.
- Pour a thin layer onto a hot, lightly oiled griddle and cook until set but still pliable.
- Spoon the coconut-jaggery filling along one edge and roll up while warm; slice to serve.
