Northeast bamboo shoot and tofu stir-fry
A quick, crunchy stir-fry of bamboo shoot, pak choi, bean sprouts and tofu over rice.

Ingredients
- 100 g Firm tofu
- 100 g Bamboo shoots (tinned)
- 100 g Pak choi
- 60 g Bean sprouts
- 2 cloves Garlic
- 1 tsp Toasted sesame oil
- ½ tbsp Soy sauce (reduced salt)
- 65 g Basmati rice
- ¼ tsp Salt
Method
- Heat the sesame oil in a wok and stir-fry the garlic for 30 seconds until fragrant.
- Add the tofu and cook 3-4 minutes, turning gently, until lightly golden.
- Add the bamboo shoot and pak choi, and stir-fry 3-4 minutes over high heat.
- Add the bean sprouts and soy sauce, and toss for 1-2 minutes until just wilted.
- Rinse the rice and simmer in twice its volume of water for 15 minutes; serve the stir-fry over the rice.
