Ohn no khao swe (coconut chicken noodle soup)

Ingredients
- 140 g Chicken thighs (boneless)
- 130 ml Light coconut milk
- 70 g Egg noodles
- 15 g Gram flour (besan)
- ½ onion Onion
- 2 cloves Garlic
- ¾ tsp Turmeric
- ¾ tsp Chilli powder
- 1¼ tsp Fish sauce
- ¼ lime Limes
- 10 g Spring onions
- ½ tbsp Sunflower oil
Method
- Cook the egg noodles in boiling water for 4 minutes, drain and divide between bowls.
- Fry the onion in the oil for 5 minutes, add garlic, turmeric and chilli powder, cook 1 minute.
- Add the chicken and cook 4 minutes, then pour in the coconut milk and 150ml water.
- Whisk the besan with a little water, stir in to thicken, and simmer 12 minutes until the chicken is cooked.
- Season with fish sauce and lime, ladle over the noodles and top with spring onion.
