Ingredients
- 150 g Pork tenderloin
- 130 g Pumpkin
- ¾ onion Onion
- 2 cloves Garlic
- 6 g Ginger
- ¾ tsp Turmeric
- ¾ tsp Paprika
- 1¼ tsp Fish sauce
- ½ tbsp Sunflower oil
- 55 g Jasmine rice
Method
- Cook the rice in a covered pan with water for 20 minutes.
- Fry the onion in the oil for 8 minutes until golden, add garlic and ginger for 1 minute.
- Add the pork and turmeric and paprika, cook 4 minutes to brown lightly.
- Add 150ml water, cover and simmer 20 minutes, then add the pumpkin and simmer 12 minutes until both are tender.
- Season with fish sauce and serve with the rice.
