Mohinga (Burmese fish noodle soup)

Ingredients
- 130 g White fish fillets
- 65 g Rice noodles
- ½ onion Onion
- 2 cloves Garlic
- 8 g Ginger
- ½ stalk Lemongrass
- 1 tsp Turmeric
- 20 g Gram flour (besan)
- 2 tsp Fish sauce
- ¼ lime Limes
- 6 g Coriander
- ½ tbsp Sunflower oil
Method
- Simmer the fish with onion, garlic, ginger and lemongrass in 700ml water for 12 minutes, then lift out the fish and flake, keeping the broth.
- Toast the besan in a dry pan for 2 minutes until fragrant, then whisk into the broth with the turmeric to thicken.
- Simmer the broth for 10 minutes, then season with fish sauce.
- Cook the rice noodles in boiling water for 4 minutes, drain and divide between bowls.
- Ladle over the broth and flaked fish, and top with coriander and a squeeze of lime.
