Sichuan dry-fried green beans
Blistered green beans stir-fried with garlic, ginger and preserved chilli, served with rice.

Ingredients
- 280 g Green beans
- 65 g Jasmine rice
- 3 cloves Garlic
- 6 g Ginger
- ¾ tbsp Soy sauce (reduced salt)
- 1 tsp Sugar
- ¾ tbsp Sunflower oil
- 1¼ tsp Chilli flakes
- 20 g Peanuts
- 10 g Spring onions
Method
- Cook the rice according to packet instructions.
- Heat the oil until shimmering and fry the green beans for 8-9 minutes, tossing often, until blistered and tender.
- Push the beans aside, add garlic, ginger and chilli flakes and fry for 30 seconds until fragrant.
- Toss through soy sauce, sugar and peanuts, cooking for another minute.
- Scatter with spring onion and serve with the rice.
