Mala tofu noodle soup
Numbing, fragrant chilli broth with silky tofu, greens and slippery rice noodles.

Ingredients
- 80 g Rice noodles
- 180 g Firm tofu
- 100 g Pak choi
- 3 cloves Garlic
- 6 g Ginger
- 1 tbsp Tamari (gluten-free)
- 1¾ tsp Chilli flakes
- 1 tsp Toasted sesame oil
- 400 ml Vegetable stock
- 12 g Spring onions
Method
- Soak the rice noodles in hot water for 8 minutes until soft, then drain.
- Simmer the stock with garlic, ginger, tamari and chilli flakes for 5 minutes.
- Add the tofu and bok choy and simmer for 4-5 minutes until the greens are tender.
- Divide the noodles between bowls and ladle over the hot broth.
- Finish with sesame oil and spring onion.
