Taiwanese popcorn chicken

Ingredients
- 130 g Chicken breast
- 2½ tbsp Cornflour
- 1 tsp Chinese five spice
- 1 clove Garlic
- ½ tbsp Soy sauce (reduced salt)
- 10 g Basil
- ¾ tbsp Sunflower oil
- ¼ tsp Salt
Method
- Marinate the chicken pieces with soy sauce, garlic and half the five-spice for 15 minutes.
- Toss the marinated chicken in cornflour to coat evenly.
- Heat the oil in a pan and fry the chicken pieces for 6-7 minutes, turning, until deeply golden and cooked through.
- Toss the basil leaves into the hot pan for 30 seconds until crisp, then scatter over the chicken with the remaining five-spice and salt.
