Three-cup tofu (san bei tofu)
Pan-seared tofu braised in a fragrant sauce of sesame oil, soy sauce and basil.

Ingredients
- 280 g Firm tofu
- 65 g Jasmine rice
- 4 cloves Garlic
- 10 g Ginger
- 12 g Basil
- 1¼ tbsp Soy sauce (reduced salt)
- 1½ tsp Sugar
- 1¾ tsp Toasted sesame oil
- ½ tbsp Sunflower oil
- ¾ tsp Chilli flakes
Method
- Cook the rice according to packet instructions.
- Pan-fry the tofu cubes in the oil for 6-7 minutes until golden on most sides; set aside.
- In the same pan, fry the garlic and ginger in the sesame oil for 2 minutes until fragrant.
- Return the tofu with soy sauce, sugar and chilli flakes, and simmer for 4-5 minutes until glossy.
- Stir through the basil leaves just until wilted, then serve over the rice.
