Taiwanese braised tofu rice (lu tofu fan)
Sweet, five-spice braised tofu and mushroom spooned over rice, a vegetarian take on lu rou fan.

Ingredients
- 260 g Firm tofu
- 120 g Mushrooms
- 70 g Jasmine rice
- 1 shallot Shallots
- 3 cloves Garlic
- 1¼ tbsp Soy sauce (reduced salt)
- 1½ tsp Sugar
- 1 tsp Chinese five spice
- ½ tbsp Sunflower oil
- 200 ml Vegetable stock
- 10 g Spring onions
Method
- Cook the rice according to packet instructions.
- Fry the shallot in the oil for 4-5 minutes until deep golden and fragrant.
- Add the garlic, mushroom and tofu, and fry for 3-4 minutes.
- Stir in soy sauce, sugar, five-spice and stock, and simmer gently for 15 minutes until rich and glossy.
- Spoon over the rice and scatter with spring onion.
