Danbing (Taiwanese scallion egg crepe)
A thin scallion pancake rolled around a savoury egg, a beloved Taiwanese street breakfast.

Ingredients
- 60 g Plain flour
- 20 g Spring onions
- 2 eggs Eggs
- ½ tbsp Sunflower oil
- ½ tbsp Soy sauce (reduced salt)
Method
- Whisk the flour with 90ml water and half the spring onion into a smooth, thin batter.
- Heat a little oil in a non-stick pan and swirl in the batter to make a thin pancake; cook 2 minutes until set.
- Pour the beaten egg over the pancake in the pan, scatter the rest of the spring onion, and let it set for a minute.
- Fold or roll the crepe up and slice; serve with a drizzle of soy sauce.
