Chicken thigh braised with garlic, ginger and basil in a rich sesame-soy sauce.

Ingredients
- 160 g Chicken thighs (boneless)
- 65 g Jasmine rice
- 4 cloves Garlic
- 10 g Ginger
- 12 g Basil
- 1 tbsp Tamari (gluten-free)
- 1¼ tsp Sugar
- 1¾ tsp Toasted sesame oil
- ½ tbsp Sunflower oil
Method
- Cook the rice according to packet instructions.
- Fry the garlic and ginger in the sesame oil and vegetable oil for 2 minutes until fragrant.
- Add the chicken and fry for 6-7 minutes until browned on all sides.
- Stir in the tamari and sugar, cover and simmer for 8-10 minutes until the chicken is cooked through and the sauce is glossy.
- Stir through the basil leaves just until wilted, then serve over the rice.
