Tonkatsu (Japanese pork cutlet)
Crisp panko-crusted pork cutlet sliced over shredded cabbage and rice.

Ingredients
- 170 g Pork tenderloin
- 45 g Panko breadcrumbs
- ½ egg Eggs
- 15 g Plain flour
- 65 g Jasmine rice
- 70 g Cabbage
- ¾ tbsp Sunflower oil
- ½ tbsp Soy sauce (reduced salt)
- 6 ml Mirin (rice cooking wine)
Method
- Cook the rice according to packet instructions.
- Dip the pork in flour, then egg, then panko, pressing to coat well.
- Shallow-fry in the oil for 4-5 minutes each side until deeply golden and cooked through.
- Rest for 2 minutes, then slice into strips.
- Serve over the rice with the shredded cabbage, drizzled with soy sauce mixed with mirin.
