Ingredients
- 100 g Mackerel fillets
- 70 g Jasmine rice
- ¼ cucumber Cucumber
- ½ tbsp Rice vinegar
- ½ tsp Sugar
- ¼ tsp Salt
- ¾ tsp Sesame seeds
Method
- Cook the rice according to packet instructions.
- Season the mackerel with salt and grill or pan-fry skin-side down for 4-5 minutes, then flip for 2-3 minutes until crisp and cooked.
- Toss the cucumber with rice vinegar, sugar and a pinch of salt.
- Serve the mackerel with the rice and pickled cucumber, scattered with sesame seeds.
